Karaikudi Kozhi varuval / Chicken fry

Hmm, hi friends, here i am yet with another spicy and tasty dish. The karaikudi chicken varuval is a fantastic dish, where the chicken is first marinated with spices , and then cooked with onion and coconut milk. The addition of curry leave gives an fantastic flavour. So here is the recipe just for you...

Ingredients :

Chicken - 500 grm ( Boneless and skinless. Wash and clean the chicken and chop it into small pieces)
Cumin seads - 1/2 tsp
Big Onion - 1 ( chopped finely)
Sombu - 1/2 tsp
curry leaves - 1 stem
Chilly powder - 1 tsp
trumeric powder - 1/2 tsp
coriander powder - 1 tsp
Salt - To taste
Yogurt - 1/2 cup
Oil - 5 tsp
Coconut Milk - 1/2 cup
Lemon juice - 2 tsp

Preparation :

* Take the cleaned chicken in a bowl, add the chilly powder, turmeric powder, Coriander Powder , salt and yorkut. Mix all together very well.
* Keep the marianted chicken in the fridge for atleast 1/2 hr.
* In the mean while, take a pan, add oil, then add the cumin seeds, sombu and fry to few mins.
* Then add the chopped onions and fry till golden brown.
* Add the curry leaves and fry for few mins.
* Add the marinated chicken, and mix every thing well.
* Sprinkle some water and cook till the chicken is cooked well. ( Dont add more water, as the chicken itself leaves out some water), at this time, check for the taste.
* After the chicken is cooked well, add the coconut milk and mix well and cook until it is dry.
* Finally squeeze the lemon and mix well, and keep frying it until it becomes very dry, and the oil comes out.
Hmmm......the yummy, spicy karaikudi Kozhi varuval is ready to be served.....Enjoy yours...

Lamb Pepper fry


Hi friends, the lamb pepper curry is another yummy dish. ( We could make use of this recipe for mutton. Because i could not get mutton , i did the same recipe with lamb...A fair play you see....). Well, this is one of Dr. Dhamodaran's, with which my mom made few changes to suit our taste. Well, here is the recipe just for you.

Ingredients :

Lamb - 500 grms ( preferably boneless)
Grenn Onion - 2 ( Chopped finely)
Tomato - 1 ( Chopped Finely)
Cinnamon stick - 2 pieces
Cloves - 3
Ginger and Garlic Paste - 3 tsp
Chilly powder - 1/2 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/2 tsp
Curry leaves - 1 stem
Pepper powder - 1 tsp
Milk - 50 ml
salt - To taste
Oil - To fry
Garam Masala - 1 tsp
Vinegar - 1 tsp

Preparation :

* Chop the Lamb into medium size peices. Wash well with water, by adding a tsp of vinegar. This will help us to get rid of smell.

* Take apan, add oil, add the clove, cinnamon stick and fry well. Add curry leaves and fry well. Now add the onion and fry till golden brown.

* Now add the Ginger and garlic paste and fry till the raw smell disappears. Then add the chopped tomatoes and fry well.
* Then add the chilly powder, turmeric powder, coriander powder and fry well, by sprinkling some water.
* Now add the lamb, and mix well. Then add the pepper powder and salt and mix well.
* The lamb will start to leave water. At this stage transfer it to a pressure cooker and pressure cook it, till they becoame soft.
* After pressure cooking it, trnasfer it again to the pan and add the garam masala and fry for some more time. ( If you still have some water keep cooking it in the pan, till they become dry)

* Finally add the coriander leaves to garnsih and serve hot.

It could go well with plain rice, Chappati, Roti, Naan or Paratha........Just have it in your own way. Enjoy.

Egg puli kulambu / Egg Kara Kulambu

Hi friends, today i am going to post egg puli kulambu/ kara kulambu. Its a simple but still done with much care, it would taste heaven. Its goes very well with plain rice with pappad. hmmmmm yummm. Well, here is the recipe just for you......

Ingredient :

Egg - 4 - 5 ( Boiled )
Big Onion - 1 ( Chopped Finely)
Cumin Seeds - 1 tsp
Garlic - 5 ( crushed )
Tomato - 1 ( Chopped Finely)
Chilly powder - 1 & 1/2 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/2 tsp
Tamarind - 1 lemon size ( Soak it in a bowl of warm water for 1/2 hr and later squeeze it well and filter it)
Salt - To taste
Asafoetida - 2 pinch
Oil - To fry

Preparation :

* Take a pan, add oil and add the cumin seeds and fry it.
* Now add the crushed garlic and fry well.


* Now add the chopped onion and fry till golden brown.


* Then add the chopped tomatoes and fry till the tomatoes are cooked and soft.
* Add the trumeric powder, chilly powder, Coriander powder and fry for few mins.
* Now add the tamarind water to the vessel and mix well and add salt.
* Allow it to be cooked for atleast 25- 30 mins


* The oil will start to come up. At this stage add the asafoetida and close the vessel and cook for 5 more mins.
* Finally add the boiled eggs.


Garnish and serve hot.
SPICE - METER : This dish is medium spicy . ( I generally love spicy food, so this one is of medium spice for me. )
